Peach Cobbler

Ingredients

4 cups peeled peaches, sliced (fresh or frozen)

2 cups sugar, divided

¼ cup water

8 tablespoons (1 stick) unsalted butter

1 ½ cup flour

¾ teaspoon kosher salt

2 ¼ teaspoons baking powder

1 ½ cup milk, milk of your choice

¼ teaspoon ground cinnamon, optional 

Instructions

1.     Preheat oven to 350 degrees.

2.    Combine 1 cup of sugar and peaches into large saucepan. Simmer on medium heat for 10 minutes, stirring occasionally. Remove from heat.

3.    Put baking 3-quart baking dish with butter into oven. Melt butter in dish and remove from oven.

4.    Using a mixing bowl, mix remaining 1 cup sugar, flour, kosher salt, baking powder, and milk. Mix until just combined, the batter may be clumpy.

5.    Pour batter directly over melted butter in baking dish. Do not stir batter.

6.    Spoon peaches on top of the batter and then drizzle the remaining syrup on top. Sprinkle cinnamon on top and place into oven for 35-40 minutes or cobbler is golden brown.

7.     Serve with vanilla bean ice cream or fresh whipped cream.

Notes:

1.     The simple syrup made from fruit, sugar, and water will be thin and then thicken.

2.    Substitutions: blueberries, raspberries, black berries, strawberries, and apples.

3.    Raspberries are softer than most, decrease the cooking time from 10 minutes to 6 minutes, stir gently.
