Healthy Banana Bread

Ingredients
4 medium ripe bananas, mashed 1/3 cup coconut oil, liquid
1⁄2 cup honey
2 eggs
1 teaspoon pure vanilla extract 1⁄4 cup milk
1 teaspoon baking soda
1 teaspoon kosher salt
1⁄2 teaspoon ground cinnamon
1 3⁄4 cups all-purpose flour
1⁄2 cup chopped raw walnuts, optional
Instructions
Preheat oven to 325 F degrees. Grease 9 x 5-inch loaf pan with non-stick cooking spray.
In a large bowl, peel the overripe bananas, using a whisk, mash bananas in a bowl until smooth. Add coconut oil, honey, eggs, vanilla and milk to the bananas and whisk until combined.
Add dry ingredients: baking soda, salt, cinnamon, flour to the wet mixture. Fold ingredients till combined.
Fold in walnuts.
Pour batter into greased loaf pan, bake for 50-60 minutes. Test loaf with a
toothpick, once the toothpick comes out clean, the loaf is done.
Notes:
Do not over mix batter. To maintain the texture and tenderness, mix batter
until just combined.
You can substitute any type of milk you like, equal parts: almond, oat, soy.
You can substitute GF flour with a 1 to 1 ratio.
