Grilled Buffalo Chicken Pizza

Ingredients

 

Pizza Dough

1 (16-ounces) store-bought pizza dough

¼ cup extra-virgin olive oil, plus 1 tablespoon for grill

 

Chicken and Toppings

2 cups cooked chicken breast, cubed into ½ inch pieces

1 cup buffalo sauce, divided

4 cups mozzarella cheese, shredded

1 cup blue cheese, crumbled

1 cup celery, thinly sliced

¼ cup green onion, chopped

 

 

Instructions

1.     Dice up cooked chicken breast, season with additional salt and pepper if needed. Toss chicken in ½ cup of buffalo sauce and set aside.  

2.    Preheat grill to 500 degrees (medium-high heat).

3.    On a sheet pan, stretch pizza dough out into a 12-inch circle/oval with extra-virgin olive oil.

4.    Using a paper towel and tongs, grease grill rack of grill. Stretch dough out a little more and place directly on the grill. Grill on both sides for 3-4 minutes on each side. Dough will have bubbles. Once the dough is cooked and golden browned on both sides, remove and place on sheet pan. Keep grill turned on.

5.    Sprinkle cheese over pizza. Add chicken/buffalo sauce and crumbled blue cheese. Add pizza back on grill. Turn heat down to low. Close over and allow cheese to melt and chicken to warm through, about 4 minutes. Remove pizza from grill.

6.    Drizzle remaining ½ of buffalo sauce over pizza. Sprinkle celery and green onion over top. Slice and serve warm.

Notes:

1.     I like to use The New Primal - Noble Made Mild Buffalo Sauce.

2.    Be sure to constantly watch the pizza dough on the grill. Typically, the back of the grill is the hottest and can burn the dough easily.

3.    I prefer to buy blue cheese in wedges and crumble it myself.

4.    Pizza cooks quickly, have your chicken and toppings ready before grilling to help the process.
