Greek Chicken Patties with Cucumber Salad & Feta Yogurt Sauce

Ingredients

Couscous

1 box (6 ounces) Pearled Couscous Original Plain 2 1⁄2 cups water
2 tablespoons extra-virgin olive oil
salt and pepper to taste

Chicken Patties (makes 7-8 patties)

1-pound ground chicken breast
1 large egg
2 cloves garlic, peeled and minced
1⁄4 teaspoon dried thyme
1⁄4 teaspoon red pepper flakes
3⁄4 teaspoon kosher salt
1⁄2 teaspoon black pepper
1 tablespoon fresh flat leaf parsley, minced 1-2 tablespoons extra-virgin olive oil

Cucumber Salad

1⁄2 medium red onion, diced
3 medium tomatoes, diced and seeds removed 4-5 mini cucumbers or 1 large, diced
1⁄2 teaspoon kosher salt
1⁄2 teaspoon black pepper
2 tablespoons extra-virgin olive oil
juice of 1 fresh lemon

Feta Yogurt Sauce

1 cup plain Greek yogurt (2% or 0%) 1⁄4 cup feta cheese, crumbled
1 teaspoon fresh lemon zest, grated 1 tablespoon fresh dill, minced

Instructions

Couscous

1. In a medium pot bring to boil couscous, water and olive oil. Reduce to a medium boil/simmer for 12 minutes or until water is absorbed, stir occasionally. Turn off heat, cover and let it stand for 5 minutes. Season with salt and pepper.

Chicken Patties

  1. In a large mixing bowl, add chicken, egg, garlic, thyme, red pepper flakes, salt, pepper and parsley. Using your hands, mix well. Divide out golf ball size portions, flatten with the palm of your hands. Set aside chicken patties on parchment paper.

  2. Preheat a large skillet on medium-high heat with olive oil. Add chicken patties to skillet, cook for 3 minutes on each side or until golden brown. Remove onto a paper towel lined plate. Set aside.

Cucumber Salad

4. Using a small mixing bowl, add red onions, tomatoes, cucumbers, and mix well. Add salt, pepper, and lemon juice. Using a spoon or spatula, stir salad together until well combined. Set aside.

Feta Yogurt Sauce

5. In another small mixing bowl add Greek yogurt, feta cheese, lemon zest and dill. Stir yogurt sauce together until combined.

Plating

6. Using a dinner plate, spread Feta Yogurt Sauce in a line, add 2 to 3 Greek Chicken Patties on top. Add Cucumber Salad next to Chicken Patties, then cooked Couscous. Garnish with fresh dill & fresh lemon.
