Fried Rice

Ingredients

2 cups white rice, day old

2 tablespoons extra virgin olive oil

2 garlic cloves, minced

2 tablespoons soy sauce

2 teaspoons toasted sesame oil

2 large eggs, scrambled

1 cup frozen peas

Instructions

1.     Heat a large pan or pot, sauté minced garlic in olive oil for 2-3 minutes on medium heat.  

2.    Turn heat to medium-high. Add rice, soy sauce and sesame oil. Fry rice for 3 minutes, or until rice is crispy on the edges.

3.    Pushing the rice to the side of the pan, add scrambled eggs to one side. Cook eggs to a soft scramble and mix into rice.

4.    Add frozen peas. Taste rice, adjust seasoning to liking and serve warm.

Notes:

1.     Garlic can burn easily be sure to watch carefully!

2.    Adjust seasoning based on soy sauce. Toasted sesame oil is a very concentrated oil-less is more.

3.    Add veggies of your choice-carrots, corn, crispy kale, bean sprouts
