Brown Butter Rice Crispy Treats
Ingredients
8 tablespoons (1 stick) unsalted butter
2 (10 ½-ounce) bags of mini marshmallows
12 cups (1 regular sized box) rice crispy cereal
1 teaspoon vanilla extract
non-stick spray
sprinkles, optional
Instructions
1. Heat a large pot on medium-high, add butter and stir till melted completely. Turn heat down to low and brown for 2-3 minutes, stir continuously.
2. Add marshmallows to pot. Using a spatula, stir vigorously until all of the marshmallows are melted completely and smooth.
3. Remove pot from heat, add vanilla extract.
4. In a large mixing bowl, add rice crispy cereal and marshmallow mixture.
5. Fold cereal into mixture until well combined.
6. Pour rice crispy mixture into a 9 x 13 in pan. Using parchment paper, spray one side of paper with non-stick spray. Place sprayed side down onto the rice crispy.
7. Using the bottom of a glass, press cereal down and stretch it to become even on top.
8. Decorate rice crispy treats with sprinkles, allow to cool and set for 20 minutes. Cut into large squares and enjoy.
Notes:
1. Browning happens quickly, watch carefully.
2. Vanilla extract should be added once the marshmallows are melted down-off the heat.
3. Folding the cereal rather than stirring, keeps the cereal intact.
4. Decorate by using cookie cutters or dipping in chocolate.
